National Pizza Party Day

We have lots to share from our weekend! So, it will take a few days. Right now the pictures are busy uploading from the camera to the computer - well, I take that back. The uploading is done. It doesn't take all that long! But, the computer is now scanning for red-eye, which takes a little longer. Anyway...over the next couple of days watch for posts about our zoo trip on Saturday and the kids' choir program on Sunday.

But first....

Life has been a bit busy over the past couple of months, so I haven't really kept up with our fun holiday celebrations. But, someone posted a tweet on Twitter on Friday stating that it was National Pizza Party Day! We'd already had lunch, and Doug and I weren't willing to give up our date night plans for a family pizza dinner. So, we decided to make a dessert pizza for the evening! We created our own form of apple pizza. It was quite yummy!
And here's the recipe for the Hibbard Family Apple Pie Pizza:
1 pkg or one batch sugar cookie dough
1 can apple pie filling (we used the kind sweetened with Splenda)
Caramel bits (a couple of handfuls)
Struesel:
2 Tbs butter 2 tsp cinnamon Melt butter. Add remaining
2 Tbs flour 1/2 cup brown sugar ingredients and mix well.
Cream cheese frosting

Press cookie dough onto pizza pan. Spread pie filling over raw cookie dough. Sprinkle caramel bits and streusel over pie filling. Back at 350 degrees 30-35 minutes or until cookie is done. Drizzle or gently spread frosting over hot pizza. Enjoy!
